Recipe for preparing home potato gnocchi


Potato gnocchi are a very simple and tasty dish to make at home: only a  few ingredients are needed and preparation does not take long.

Let’s look at how to prepare gnocchi for about 5 people.


300 gm flour of type 00 (11 oz)
1 kg of potatoes (2.2 lbs)
1 egg
Salt to taste


Wash the potatoes thoroughly, put them in a pot with water and allow to boil until cooked. For this recipe it is preferable to use red floury potatoes. The result will be optimal, the dough will be very soft to the touch.


Once the potatoes are cooked, peel and crush them with the appropriate crusher. Then let them cool down.
On a flat working bench or in a large bowl with high edges, put the crushed potatoes, add the egg, flour and a pinch of salt. Work well all the ingredients, mixing them together until you get a smooth, homogeneous and compact mix.


Form “sticks” of dough about 2 or 3 inches long and cut them with a small knife into smaller pieces about 1 inch wide. Place them now on a floured surface and a slightly press them with a fork to give them that curly appearance. Let them rest for about 15 minutes.

At this point they are ready to be cooked in boling salted water and seasoned with your preferred sauce.
