What makes Christmas in South Tyrol so special? Will it be the festive air, the lights, the dishes? If one could summarize the Advent smells in South Tyrol, they would surely be those of the zelten. It is a traditional Christmas cake, an ancient recipe handed down for generations. Tradition has it that to prepare the zelten were the marriageable girls who prepare it to find love. In the video we present the traditional zelten recipe prepared by famous South Tyrol baker  Richard Schwienbacher. Richard’s shop produces some of the best varieties of bread in South Tyrol.

 

Cosa rende il Natale in Alto Adige così speciale? Saranno l’aria di festa, le luci, le pietanze? Se si potessero riassumere i profumi dell’Avvento in Alto Adige, sarebbero sicuramente quelli dello zelten. Si tratta di un dolce natalizio tradizionale, una ricetta antichissima tramandata da generazioni. La tradizione prevede che a fare lo zelten siano le ragazze in età da marito che lo preparano per trovare l’amore. Nel video vi proponiamo la ricetta tradizionale dello zelten del panettiere Richard Schwienbacher, che produce alcune tra le varietà di pane più buone dell’Alto Adige.

     Ingredients:

     00 type flour 125 g
marsala or brandy 100 ml
pine nuts 50 g
granulated sugar 75 g
an egg and a yolk
butter 60 g
milk 50 ml
sultanas 50 g
dried figs 50 g
bitter cocoa 1 spoon
shelled walnuts 50 g
baking powder 8 g
candied fruit (orange, cedar) 100 g
almonds, walnuts, candied fruits for decoration
